If only you could choose 5+ stars. Dining at Stillwater was an unforgettable dining experience, from the welcome drinks right up to handing us the right jackets from the cloak room. The service was impeccable, nothing was written down, and everything was spot on. The presentation from the plated meals to decantering our wine was next level. I'm relatively easy to impress with food, though service not so much...yet, I was floored at the attention to detail. Bravo Stillwater!

I was fortunate enough to dine here for my birthday. The experience was one of the highlights of my year so far. Historic location. Delicious food. Great selection of wines. Lovely, friendly service. Our waitress even sung "happy birthday" to me. Highly recommended.

Every single thing about the restaurant and accommodation is outstanding. From the moment we booked the stay the welcome was fabulous. Everything possible was done to make sure our weekend was the best it could be - from having the music we liked on when we arrived to complimentary welcome drinks and planning our weekend itinerary.

As for the restaurant it's a lovely space on the water, however it's the food and service that really makes the experience special. All dishes were fantastic and it's one of those menus where you could choose almost everything and not be disappointed. As for the service there is a mix of long term industry professionals who know their stuff as well as younger team members who all showed great initiative and much knowledge and appear genuinely thrilled to work where they do and to provide a great guest experience.

One of Australia's great dining and lodging destinations.

We booked at Stillwater for Valentines Day. The staff were friendly and very helpful. Serving sizes were small to medium which suited us, but could potentially be on the small size for some. The vegetarian options were good and the wine selection was comprehensive. The dessert was the highlight. We had a window seat which was nice, however the tables are quite deep, so there is a fair bit of distance between you and your date. Overall a really nice dinner.

We have been eating our way around Tasmania for the last few weeks and we both agree this is the best dining experience this for. We had lunch with a beautiful bottle of wine. The food was flawless even down to the children's pasta which I was more than happy to finish off. The lamb has to be the best I have had in my life so far. Staff were fabulous and receptive with our two small children (2yr old and 5 month old) even though our 2 yr old was grumpy until the food came out. Beautiful setting and cannot wait to come back.

Every time I eat here, quite simply it only gets better. I brought my parents from the mainland and they commented, best meal they've had in a long time. Fabulous, food service and ambience. Launceston's best restaurant and that is saying something

Stillwater in Launceston is hands down the best dining experience we've had in Tasmania. The service was flawless, and Zane, our waiter, made us feel right at home without any of the pretentiousness you sometimes find in fine dining establishments. Zane's friendly and knowledgeable approach was refreshing and his attention to detail and commitment to the customers' dining experience was outstanding.

The restaurant's vibe is a great mix of laid-back and upscale, creating a cozy, yet classy atmosphere. We lucked out with a window seat, treating us to stunning views over the Tamar River.

Now, let's talk about the food. It was top-notch. The quail was cooked to perfection, the beef was delicious, and the mushroom gnocchi was a taste sensation. Every dish was perfectly executed and presented.

And let's not forget the wine list. It's clear that the team at Stillwater are serious about wine. They've curated a fantastic and diverse selection that complements their outstanding cuisine.

To sum it up, Stillwater is a must-visit in Launceston. With its fantastic service, incredible food, and stunning setting, it's the place to go for a memorable fine dining experience in Tasmania.

(Reviewing as a restaurant; didn't stay at the rooms) Undoubtedly one of Tasmania's best restaurants. The food is wonderful and the service is top notch. Views over the water add to the ambience. The serving sizes are generous, and you'll have to get two courses minimum (you'll probably get more!) so be prepared for a big meal. We didn't finish ours which was almost devastating to leave behind. Strongly recommend a visit if in Launceston.

We made the trip to Launceston purely to visit Stillwater. We stayed in one of the rooms and ate dinner in the restaurant. Although the location wasn't amazing, right next to the highway. The hotel room was nice, clean with some thoughtful touches like a drink on arrival and food in the fridge. The bathroom not having a ceiling was strange and I felt like the price was pretty high for the size of the room and overall facilities but it was fine for one night. It was great being able to walk down the stairs straight to dinner. The staff were lovely throughout the stay and the food at the restaurant was exceptional. Thank you!

Amazing 4.7 out of 5 ??

Absolutely a must eat when in Launceston. Well presented dishes that taste as good as it looks. Different flavours that just go so well together. I was even game enough to try the wallaby and after the initial hesitation, can report that it was a fine dish! We have lots of modern Australian restaurants in Sydney but Stillwater knocks the ball out of the park. Delicious!
Absolutely outstanding - a must for foodies!
This restaurant is situated in an 1830's flour mill and overlooks the Tamar River, providing a beautiful setting for an amazing feast.
From the moment we arrived the staff were attentive and professional - we seriously did not want for anything at all!
Thankfully we had reviewed the menu online prior to ordering (as we may have been there all night deciding!). We decided on the Steamed King Prawn Dumplings, House Gnocchi, Cape Grim Beef Tartare, Cressy Lamb Rump and a side of Roasted Broccoli (full description with pic's).
Each dish was without a doubt made to be savoured! You could taste the individual elements and knew that care had been taken with the ingredients. If we had to choose, the gnocchi was probably our favourite, but to be honest all dishes were outstanding - there is a reason why this restaurant has received so many awards!
Only small suggestion, bring a jacket. It was surprisingly a bit fresh and most diners around us still had their coats on so something to prepare for.
Other that, special occasion or otherwise, make sure you try Stillwater!

Went to the restaurant not the hotel....Half the price of what you would pay in Sydney for this quality of a fine dining experience. Even if it was twice the price it would still stand on its own thanks to thoughtful wait staff and wise senior staff overseeing things coupled with great preparation of some great quality produce without any sense of ego or pretentiousness. Just tell them what you like and they make it happen, ask for suggestions and trust their choices.

I would not hesitate to recommend it as a top tier modern Australian restaurant.

You can argue the pecking order it you like....but I think this place would hold its own with the finest I've experienced.

Superb restaurant and hotel accommodation in Launceston. Stayed here as a couple in a beautiful room.
Service was superb from start to finish.
Shower & bathroom great. Bedroom pretty spacious. Lovely view out over the river estuary.
We ate downstairs in the private room with friends. Excellent food and wine. As we were leaving early the hotel even delivered breakfast to our room. We would highly recommend.
Beautiful location for a quick lunch in the wine bar. We didnt have a booking in this busy restaurant but were easily catered for. Ordered 3 tasting plates. All extremely tasty and beautifully presented. Our waiter was amazing and the view over the water was just lovely. Thank you for the great experience

We had booked the Stillwater Seven before COVID and delayed our booking multiple times until we finally made the trip this past year.

Upon (early) arrival, we were welcomed by the staff, who was one of the owners and favorably remembered our initial booking from years ago.

We were offered a complimentary drink in the fantastic restaurant until our room was available. We had plans to walk around Launceston a little during our stay until we saw our room. We loved our room so much, overflowing with technology (especially the lighting), that we opted to relax, nap, watch TV, and relax a little more. We even opted to order room service for breakfast (which was most excellent too).

We did happen to journey outside of our room to the Stillwater Restaurant, and our VIP-like service continued with incredible service and conversation with our waiter, Graeme. ...and the food goodness! We had been up and down the East Coast of Australia over the past couple of weeks, and no meal could compare to our entrees, mains, and desserts at the Stillwater Restaurant.

All-in-all, this accommodation, and restaurant are rare. We were treated like special guests, and I'm confident the hundreds of glowing reviews confirm all other guests at this hotel/restaurant are too.

Bonus points: My son left his AirPods at the hotel. The hotel sent me a text asking if they could ship them to our home in the states without me asking or requesting us to pay for shipping (or the inconvenience).

This place is exceptional, and, no doubt, you will be treated as such. Highly recommended!
If I could give it six stars I would! A wonderful dining experience - the food and wine were sensational, the service was exceptional and all in lovely surrounds! Order all 3 courses and you won't be disappointed! We had Graham (hope I've spelt it correctly?) as our waiter and he was attentive and thoughtful. It was a gastronomic experience from start to finish.

I very much enjoyed my night here at the Stillwater. The food was sensational and very reasonably priced. I enjoyed the sophisticated atmosphere and the staff were very attentive.
The only reason I drop a star is due to the exorbitant prices of the wine and drinks! A normally $30 bottle of wine was inflated to $75 (and you won't find bottles much less than this price on the menu). As such, I would recommend dousing yourself prior to attending.
Small portion but full of flavor, very tasty and delicious. Fresh ingredients and very high quality. Well looked after. They even went the extra step and light up a candle on my dessert for my birthday. Pleasant experience. Thank you for your great service.

Very impressed with the food and service. Easily one of the best restaurants in Launceston. We were lucky to book a table by the window with Tamar river view on a beautiful sunny day. ?? The food was absolutely top quality. The fish of the day was the highlight. Super tender and fresh, cooked to perfection.

What an absolute gem, doesn't look like much from the outside but once you step in, you have this beautiful warm ambiance and the most lovely staff. We were walk ins and were seated in the restaurant but warned they were busy so might have to move to the bar area for dessert (no issues at all, they were polite and let us know this might be the case in advance, and fed us quickly and beautifully). The food was really special, different and high quality, alcohol range was good. And the care the staff took in bringing out breads and little dessert portions. I rate this place. Had a lovely evening here.

Fabulous food is tainted by horrible service here.

I felt quite unwelcome by the staff the night I visited. A rude waitress came by when my plate was finished to dryly say "all done?" before taking our plates without another look. Then I saw her go to another table with empty plates, where she happily asked how their meal went, and seemed like she actually cared about them. I'm not sure what the reason for this discrimination was, but at the end of the day - there is no reason for discrimination. Also had a waiter drop off our after dinner mints in the most monotone voice he could muster.

Food is good, which redeems the review from one to two stars. But unfortunately, the whole experience is worth these two stars because of my personal experience with staff who did not want to treat everyone with kindness.

I assume the high prices also accounts for paying the staff, so it would be nice if they could do their jobs properly (or at least pretend). Overall, not happy and would not recommend. You can get better food with better service elsewhere.

We had great recommendations to visit Stillwater and omg... this has to be one of the BEST places we have had the pleasure to not only stay for 3 nights but to also dine in their amazing restaurant.

Breakfast, lunch and dinner are served with locally sourced produce.

The staff are well informed and friendly. The rooms are absolutely deluxe. With views over the Tamar river from our room and the restaurant who could ask for more.
The entire team there really turned it on for us. Unique touches such as the fresh baked on site sourdough delivered to our room each afternoon with the spiced popcorn. In the fridge we found oat milk, sliced meats and superb goats cheese It was full of wonderful treats and they were not overly expensive.
The entire experience was a joy, and we cannot wait to return to Stillwater for what we know will be a special stay.
Thanks to Chris and his staff .

My husband and I probably had one of the best meals we've ever had here. We had a beautiful window seat by the Tamar river, delicious cocktails and even better food.

The Cape Grim eye fillet served with garlic custard was the highlight- all the flavours worked so well together and the meat was cooked to perfection. Staff were also very attentive and professional. We would come back to Lonnie just to dine at Stillwater again.

Absolutely amazing service! The staff are so welcoming, charming & friendly with great knowledge & attitude. The venue is gorgeous & has wonderful views in daylight & at night. We came for dinner & I was so happy with my entree & main. I wanted to try so many things on the menu, they sound so delicious.
I had a great negroni made for me.
Thanks for an amazing evening!

We had the pleasure of starting at Stillwater for two nights, with dinner there one night and brekky for both.

The entire team there really turned it on for us. So many little personal touches throughout the start, whether it was the baked on site sourdough delivered to our room reach afternoon with the spiced popcorn, the oat milk in the fridge or the questionnaire we were asked to fill in before we got there so that they could accommodate all of the smaller things to make us feel special. The ease in which everything was so smooth, the booking process, eating at either Stillwater or the black cow.

But what we LOVED, was the quality of the place. The rooms were next level luxurious. That mini bar (and reasonably priced!), The dinner was up there as one of the best we've had.

So accessible and nestled right next to the cataract gorge, I couldn't think of a better place to be. The pub across the trial is worth a look too. Take us back to Stillwater already!

Do yourself a favour and spoil yourself next time you're in Launceston. Stay here and you will be thanking me!

This restaurant is a MUST when you come, intimate, beautifully appointed, easy to access. The staff are amazing, informed and willing to advise you through the meal. And the food was superb, from the sourdough, the cultured butter, the octopus starter that was incredible to the Cape grim fillet that could be cut with a butter knife. No room for dessert but the morsel of dark chocolate ganache with freeze dried raspberry was perfect. Booking in advance is essential but worth planning ahead.
